Orbetello's lagoon has produced prized bottarga - salt-cured grey mullet roe - since Etruscan times. Often called "the gold of the lagoon," Orbetello bottarga is shaved paper-thin over spaghetti with garlic, chilli and good olive oil, or served as delicate slices with a drizzle of lemon juice.
